Orange Whipped Cream Topping

I haven’t made this one in so long – guess I just forget about so many of these recipes until I start looking through my recipe boxes! This is so light and refreshing on a piece of so many different cakes, or even a dish of vanilla ice cream, and the orange juice and grated rind give it a great citrus kick. Read more . It takes a little extra prep, but the flavor pays off.
Ingredients:
1/2 cup white sugar
2 tablespoons flour
1 egg (or you can use 2 egg yolks)
juice and grated rind of 1 good-sized orange
1/2 pint whipping cream, whipped to stiff peaks
Directions:
1. In the top of a double boiler pan, whisk together sugar and flour.
2. Whisk in egg, mixing well.
3. Add the juice and grated rind, whisking until well blended.
4. Cook mixture over boiling water until thickened.
5. Remove pan from heat and cool mixture completely.
6. When cooled, gently fold in the whipped cream.
7. Store in refrigerator.
8. Serve over angelfood slices, white cake, sponge cake, pound cake, vanilla ice cream - any way you can think of! A nice presentation is served over any cake slice, with mandarin orange slices around the edge of the plate, wtih some slivered almonds scattered over all.
