Try a classic watercress salad recipe that uses fresh orange juice, honey, dry mustard and pistachios to create big flavors. Buy nuts that have been shelled. Ingredients:
7 cups torn bibb lettuce |
2 cups trimmed watercress |
1/4 cup sliced green onions |
6 tablespoons fresh orange juice |
2 tablespoons tarragon vinegar |
2 teaspoons extra-virgin olive oil |
2 teaspoons honey |
1/2 teaspoon dry mustard |
2 cups orange sections (about 4 oranges) |
2 tablespoons chopped pistachios |
Directions:
1. Combine first 3 ingredients in a large bowl; toss gently. Combine juice and next 4 ingredients (juice through mustard) in a small bowl; stir with a whisk. Drizzle vinaigrette over lettuce mixture; toss gently to coat. 2. Place 1 cup lettuce mixture on each of 8 salad plates; top each with 1/4 cup orange sections and 3/4 teaspoon pistachios. Serve immediately. |
