Orange Walnut Tea Cookies |

This recipe I've had since my Sr. year in high school. It's an easy cookie to make with great flavor and wonderful for teas and gift giving. Ingredients:
1/2 c. butter (no substitute), softened |
1/4 c. sugar |
1 large egg, separated |
finely grated rind of 1 orange |
finely grated rind of 1 lemon |
1 tsp lemon juice |
1 c. flour |
1 1/2 tsp water |
1 c. walnuts, finely chopped |
Directions:
1. In a medium bowl, cream butter and sugar. 2. Beat in egg yolk, orange rind, lemon rind and lemon juice. 3. Gently and gradually beat in flour. 4. Tightly cover bowl and chill until firm enough to handle. 5. Using a generous 1/2 TB for each, shape dough into balls. 6. In a small shallow bowl with a fork, beat egg white and water enough to blend. 7. With a fork dip each ball into egg white mixture, then roll lightly in walnuts. 8. Bake 1 apart on greased cookie sheets in a 325* oven for 20-25 minutes. 9. Cool completely on a wire rack. |
