These pretty, delicious and easy to prepare biscuits were found in Kitchen to Kitchen a feature in The Houston Chronicle. Hope you enjoy. Ingredients:
4 tablespoons butter |
1/2 cup orange juice |
1/2 cup sugar |
2 cups flour |
1/4 teaspoon salt |
1 tablespoon baking powder |
3 -4 tablespoons shortening |
3/4 cup milk |
4 tablespoons butter, softened |
1/4 cup sugar |
1/2 teaspoon cinnamon |
Directions:
1. For the topping:. 2. Combine ingredients in a saucepan and cook over medium heat until butter and sugar melt, about two minutes. 3. Divide the topping among a standard muffin tin. 4. Do not line the muffin tin with paper baking cups. 5. For the biscuits:. 6. Preheat the oven to 425 degrees. 7. Sift the flour, salt and baking powder into a large bowl. 8. Cut in the shortening with two knives or a pastry blender until it forms coarse, uneven crumbs. 9. Add the milk. 10. Mix well, but with a light touch. 11. On a flour-dusted surface,roll the dough into a large rectangle.(approx 11x9). 12. Spread with butter. 13. Mix the sugar and cinnamon and sprinkle it over the dough. 14. Roll as you would a jelly roll and slice into 12 biscuits. 15. Place a single biscuit in each muffin cup. 16. Bake until golden, about twenty minutes. 17. Cool a couple of minutes,then invert cautiously onto a plate,taking care that the sticky topping doesnt burn you. |
