I got this out of a grocery store coupon book. We use this one a lot. It's really easy and uses ingredients that are always on hand. It's quick and the flavor is light, but great. Ingredients:
2 salmon fillets |
1 tablespoon olive oil |
3 tablespoons dijon mustard |
1 garlic clove, minced |
1 tablespoon dried thyme |
salt |
pepper |
1 orange, peeled and sliced |
1/4 cup orange juice |
Directions:
1. Combine olive oil, mustard, thyme, orange juice,and a little salt and pepper. Rub on salmon. 2. Heat grill or broiler to high. Sear salmon - 1-2 min on each side. 3. Reduce heat to med. Cook salmon about 5 min per side. During last minute, top with orange slices. |
