Another great recipe from Saltscapes magazine!! Another must-try side dish - Ingredients:
2 teaspoons butter |
1 garlic clove, thinly sliced |
1/2 teaspoon tarragon |
salt and pepper |
1 lb.green beans |
1/4 cup orange juice |
1 teaspoon grated orange zest |
1 orange, peeled and cut into segments |
Directions:
1. Melt butter in a medium saucepan; add garlic, tarragon, salt and pepper. Cook, stirring until garlic is tender. Add beans; cook, stirring until garlic is tender. Add beans; cook, stirring 5-6 minutes, until beans are just tender. 2. Add orange juice; cook about 5 more minutes, until juice comes to a boil and beans are cooked through. Stir in zest and orange segments. |
