Ingredients:
4 1/2 cups peeled, cubed sweet potato |
3 tablespoons margarine |
1/2 cup unsweetened orange juice |
1/4 cup whipping cream |
1 tablespoon brown sugar |
1 tablespoon triple sec or other orange-flavored liqueur |
1/4 teaspoon salt |
1/4 teaspoon ground nutmeg |
1/4 cup firmly packed brown sugar |
1 1/2 tablespoons all-purpose flour |
1 1/2 tablespoons margarine, softened |
1/4 cup finely chopped pecans |
Directions:
1. Cook sweet potato in boiling water to cover 15 minutes or until tender; drain. Combine sweet potato and 3 tablespoons margarine in a large bowl; mash. Add orange juice and next 5 ingredients; stir well. Spoon mixture into 4 lightly greased 8-ounce ramekins; set aside. 2. Combine 1/4 cup brown sugar, flour, 1 1/2 tablespoons margarine, and chopped pecans; sprinkle evenly over sweet potato mixture in ramekins. Bake, uncovered, at 350° for 20 minutes or until bubbly. |
