Orange Streusel Pumpkin Cranberry Bread |

A touch of orange, chopped cranberries, and walnuts make this pumpkin bread delicious and more than special. Ingredients:
1-1/4 cups sugar |
1 teaspoon baking soda |
3/4 teaspoon baking powder |
3/4 teaspoon salt |
3/4 teaspoon cinnamon |
1-2/3 cup flour |
1/2 cup oil |
1/2 cup orange juice |
1 teaspoon vanilla |
1 can pumpkin (not pie filling) |
1/3 cup chopped cranberries |
2 eggs, slightly beaten |
streusel topping |
1/3 cup chopped walnuts |
1/3 cup packed brown sugar |
2 tablespoons all-purpose flour |
1 teaspoon grated orange peel |
1 tablespoon butter, melted |
Directions:
1. Sift dry ingredients together in a large bowl 2. Add liquid ingredients in order given 3. Stir well 4. Pour into 2 greased and floured small loaf pans or one large loaf pan 5. STREUSEL TOPPING 6. In medium bowl, combine brown sugar, 2 tablespoons flour, orange peel, walnuts and the melted butter 7. Sprinkle evenly over batter in pan or pans 8. Bake at 325 degrees for about 50 minutes |
