Save time by baking potatoes a day ahead. Cover and chill until ready to assemble. Ingredients:
3 pounds sweet potatoes |
1/3 cup orange juice |
1/4 teaspoon ground nutmeg |
1/4 teaspoon ground ginger |
vegetable cooking spray |
1/2 cup chopped pecans |
1/2 cup firmly packed brown sugar |
1 teaspoon grated orange rind |
1 teaspoon ground cinnamon |
Directions:
1. Bake potatoes at 400° for 1 hour or until tender; peel. Reduce oven temperature to 350°. 2. Beat potatoes, orange juice, nutmeg, and ginger in a large mixing bowl at medium speed with an electric mixer until smooth. Spoon mixture into a 13- x 9-inch baking dish coated with cooking spray. 3. Combine chopped pecans and next 3 ingredients; sprinkle evenly over potato mixture. 4. Bake at 350° for 20 minutes or until thoroughly heated. |
