Orange Spanish Cream

orange flavoured pudding that separates into a custardy lower layer and fluffy upper layer; serve with a sprinkling of grated dark chocolate
Ingredients:
3 eggs, separated
2/3 cup sugar
2 tsp. orange zest
1/2 cup orange juice, fresh squeezed if possible
14 g gelatin (2 tbsp.)
3 cups skim milk
Directions:
1. In a large bowl, beat the egg yolks, sugar and orange zest until thick, pale yellow and creamy.
2. In a small bowl, sprinkle the gelatin over the orange juice. Once the gelatin is softened, put the bowl into a large pan with about 1 boiling water in it. Stir until the gelatin has dissolved and the solution is runny.
3. Stir the gelatin/juice mixture into the milk (in a large saucepan). Heat this mixture until almost boiling. (If it boils, the gelatin won't set anymore, so be careful!)
4. Slowly pour the warm milk mixture into the egg yolk mixture, stirring continuously.
5. In a separate bowl, beat the egg whites to stiff peaks. Gently fold into the warm custard. (If you let the custard cool first, you won't get the separation into layers.)
6. Refrigerate for at least 2 hours, until set.
