This is a cake I made for Christmas one time.... its alot of work but worth the effort.... its different... Ingredients:
1 cup butter |
2 cups sugar |
4 eggs |
1 teaspoon soda |
1/2 cup buttermilk |
3 1/2 cups flour |
1 pound chopped dates |
1 pound candy orange slices, chopped |
2 cups pecans |
1 can angel flake coconut |
icing |
2 cups powdered sugar |
1 cup orange juice |
juice of one lemon |
Directions:
1. Cream butter and sugar until smooth; add eggs, 1 at a time, and mix well. 2. Add soda to buttermilk, then add to creamed mixture. 3. Sift flour into big bowl; add dates, orange slices, and nuts. 4. Stir until mixed well and add coconut. 5. Combine to cream mixture; stir well (This will be very heavy and hard to stir) 6. Pour into a greased and floured angel food cake pan or a large bundt pan. 7. Bake at 250 degrees for 1 1/2 hours. 8. For the icing.. mix well and pour over cake while hot and let it set overnight before serving..... |
