1 1/2 cups water |
1/2 cup orange juice |
3/4 cup chopped onion |
3 lbs winter squash, peeled seeded and cubed |
1 large cooking apple, peeled and cubed |
1 strip orange zest |
1 teaspoon ground cinnamon |
1/4 teaspoon ground nutmeg |
1/4 teaspoon ground cloves |
1 1/2 cups milk |
2 tablespoons cornstarch |
salt and pepper |
6 thin slices oranges |
snipped chives (to garnish) |
Directions:
1. Combine all ingredients except milk, cornstarch, salt and pepper, orange slices and chives in slow cooker; cover and cook on high for 3-4 hours, adding 1 cup milk during last 30 minutes. 2. Stir in remaining milk and cornstarch, stirring for 2-3 minutes; discard orange zest. 3. Process soup in food processor or blender until smooth; season to taste with salt and pepper. 4. Serve garnished with orange slices and chives. |
