Orange-Scented Couscous Timbales |

Super Quick. If you don't have custard cups for shaping the couscous into timbales, just fluff it with a fork and serve it as you would rice. Ingredients:
1 cup orange juice |
1 cup low-sodium chicken broth |
1 (10-ounce) package uncooked couscous |
2 teaspoons grated orange rind |
cooking spray |
2 tablespoons sliced almonds, toasted |
orange rind strips (optional) |
Directions:
1. Combine orange juice and chicken broth in a medium saucepan; bring to a boil. Stir in couscous and orange rind; cover and remove from heat. Let stand 5 minutes. 2. Spoon mixture evenly into 6 (6-ounce) custard cups coated with cooking spray. Invert onto a serving platter; sprinkle with almonds. Garnish with orange rind strips, if desired. |
