Orange Roughy With Vegetables |

Ingredients:
2 lbs orange roughy fillets |
2 tablespoons lemon juice, divided |
1 (16 ounce) can stewed tomatoes, cut |
1 cup celery, minced |
1 cup onion, chopped |
1 cup bell pepper |
1 cup mushroom, sliced |
1/4 teaspoon thyme |
1 pinch garlic powder |
1 pinch hot pepper flakes |
1 pinch hot pepper flakes |
Directions:
1. Spray a 13x9-inch pan with non-stick cooking spray and sprinkle with 1 tablespoon lemon juice. 2. Arrange fish in a single layer and sprinkle with 1 tablespoon lemon juice. 3. Combine remaining ingredients and spoon over fish. 4. Bake uncovered in a 350°F oven for 25-30 minutes, until fish flakes and sauce is thick. |
