This is a healthy and colorful beginning to any meal. The almonds are wonderful when combined with the greens, oranges and the tangy dressing.Beth Ask, Ulster, Pennsylvania Ingredients:
6 tablespoons unsweetened pineapple juice |
3 tablespoons cider vinegar |
2 tablespoons water |
2 tablespoons chicken broth |
2 tablespoons canola oil |
1 tablespoon minced fresh basil or 1 teaspoon dried basil |
1 teaspoon sugar |
1/2 teaspoon garlic powder |
2 bunches romaine or red leaf lettuce, torn (about 12 cups) |
1 can (11 ounces) mandarin oranges, drained |
1/3 cup sliced almonds, toasted |
Directions:
1. In a jar with a tight-fitting lid, combine the first eight ingredients; shake well. In a large salad bowl, combine the lettuce, oranges and almonds. Add dressing and toss to coat. Serve immediately. Yield: 8 servings. |
