These yeasty sweet buns are served at the All Steak! restaurant in Cullman,Alabama. The recipe was in the R.S.V.P. section of a November 1985 issue of Bon Appetit magazine. Rising time for rolls is not included in prep time. Ingredients:
4 ounces fresh yeast cakes |
1 1/3 cups warm water (105 to 115 degrees) |
1/4 cup sugar |
1/4 cup vegetable shortening, melted |
1 egg, room temperature |
1 teaspoon salt |
3 1/4 cups all-purpose flour |
1 cup butter, room temperature |
1 cup sugar |
1 tablespoon grated orange peel |
Directions:
1. For Dough:. 2. Crumble yeast into large bowl, stir in water and sugar. 3. Let stand until foamy, about 10 minutes. 4. Stir shortening,egg and salt into yeast mixture. 5. Add flour 1/4 cup at a time, stirring until mixture is smooth. 6. Grease bowl; add dough, turning to coat entire surface. 7. Cover and let rise in draft-free area until doubled in volumn, about 1 1/2 hours. 8. For Filling:. 9. Beat butter and sugar to blend well; stir in orange peel. 10. To Assemble:. 11. Roll dough out on generously floured surface to thickness of 3/16 inch. 12. Spread filling evenly over dough; roll dough up into cylinder, as for jelly roll. 13. Cut into 1 1/2-inch-thick slices. 14. Set each slice in paper muffin liner; arrange on baking sheet. 15. Cover with towel and let rise in warm draft-free area 30 minutes. 16. Preheat oven to 400 degrees. 17. Bake rolls until lightly browned on top, about 12 minutes. |
