This is so incredible. I was not sure that rice would work in a cake but it does. I got this recipe from a bunco friend who served this when she had an Asian dinner party and it was a huge hit. Enjoy Ingredients:
1 cup white rice |
1 quart milk |
3/4 cup butter |
1 cup white sugar |
5 egg yolks |
5 egg whites |
2 tablespoons grated orange zest |
1/2 cup golden raisins |
Directions:
1. Preheat oven to 350 then butter and flour a tube pan. 2. Rinse rice under cold water then drain and cook rice in milk over medium low heat 15 minutes. 3. Remove from heat and set aside. 4. In medium bowl cream butter and sugar until light and fluffy. 5. In separate bowl beat egg yolks on high speed until they are pale yellow and doubled in volume. 6. Add egg yolks to butter mixture and blend well then add to rice mixture. 7. Stir in orange zest and raisins. 8. In medium bowl beat egg whites to stiff peak stage then gently fold whites into rice mixture. 9. Bake at 350 for 50 minutes then cool on a wire rack 30 minutes before turning out. 10. Cool completely then serve chilled. |
