A delicious change of taste in muffins. The orange taste makes this recipe very flavorful. Ingredients:
1 3/4 cups all-purpose flour |
3 teaspoons baking powder |
3/4 teaspoon salt |
1/4 cup white sugar |
1 egg, beaten |
1 orange, zested |
1/4 cup orange juice |
1/2 cup milk |
1/3 cup vegetable oil |
3/4 cup raisins |
Directions:
1. Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with paper muffin liners. 2. In a large bowl, sift together flour, baking powder, salt and sugar. In a separate bowl, combine egg, orange zest, orange juice, milk and vegetable oil. Stir egg mixture into flour mixture just until moistened; fold in raisins. Spoon batter into prepared muffin cups. 3. Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean. |
