Ingredients:
2 cups whole wheat pastry flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg, beaten
3/4 cup orange juice
1/4 cup canola oil
1/3 cup honey
1/2 teaspoon vanilla extract
1/4 cup golden raisin
1 tablespoon orange zest
Directions:
1. Combine dry ingredients in a large bowl; stir in combined remaining ingredients, mixing until just blended.
2. Pour batter into greased muffin tins; filling about 1/2 full.
3. Bake at 350 until muffins are browned, about 20 minutes.
