From my Grandmother's recipe box. Ingredients:
1 cup sugar |
2 tablespoons butter |
1 egg |
1 orange, rind of, grated |
1/2 cup orange juice |
1 teaspoon vanilla extract |
2 cups all-purpose flour |
1 teaspoon baking soda |
1/4 teaspoon salt |
1 cup seedless raisin |
1/2 cup boiling water |
Directions:
1. Pour 1/2 a cup boiling water of the raisins, add the rind of 1 orange. Let cool. 2. Mix together butter and sugar; cream until fluffy. Add egg, juice, and dry ingredients and blend. 3. Stir in cooled raisin mixture. Pour into prepared bread pan and bake 1 hour at 350. |
