Although I haven't tried this recipe yet, I think it looks good and healthy. It has very little refined sugar and lots of oats. I found it on the back of a Great Value (Wal-Mart) Prunes box. I plan to make it soon for my prune-loving daughter. Since I haven't made it yet, the prep time is a guess. Ingredients:
1 cup pitted prune |
1 ripe banana |
3/4 cup milk |
1/4 cup orange juice |
1 egg, beaten |
2 teaspoons grated orange peel |
1 cup oat bran |
1/2 cup rolled oats |
3/4 cup flour |
2 tablespoons brown sugar |
1 tablespoon baking powder |
1 teaspoon cinnamon |
Directions:
1. Mix prunes and banana in food processor until combined well. Stir in milk, orange juice, egg and orange peel. 2. In a separate bowl, mix oat bran,oats, flour, brown sugar, baking powder and cinnamon. Make a well in the center of dry ingredients and pour in prune/banana mixture. Stir until combined. 3. Fill 12 paper-lined muffin tins 2/3 full and bake at 400 degrees F for about 20 minutes or until centers spring back when pressed. |
