This wonderful pound cake is sure to please your guests. It's so easy to make & plenty for everyone Ingredients:
1 3/4 cups (3 1/2 sticks) unsalted butter - softened |
2 3/4 cups sugar |
8 eggs |
1 tsp orange extract |
2 tsp grated orange rind |
3 cups all-purpose flour |
1 tblsn baking powder |
1 tsp salt |
3/4 cup fresh orange juice - from 3 oranges |
drizzle |
3/4 cup icing sugar |
1 tblspn orange juice mixed with 1 tsp water |
Directions:
1. Pre-heat oven to 350 degrees 2. Butter & flour 10 tube pan - tap out excess flour 3. Combine flour, baking powder & salt in a small bowl & set aside 4. In large bowl of an electric mixer, beat butter until creamy 5. Gradually beat in sugar until fluffy 6. Scrape down the bowl 7. Add eggs one at a time 8. Beat in extract & rind 9. On medium speed, gradually beat in flour mixture alternating with orange juice 10. Beat 2 mins, scraping down bowl occasionally, until thick & creamy 11. Pour into prepared pan 12. Bake at 350 for 35 mins. Lower heat to 300 & bake for an additional 45 - 50 mins or until a toothpick inserted in the center comes out clean 13. Cool in pan on wire rack 15 mins 14. Turn cake out onto wire rack & cool completely 15. In a small bowl, whisk together the diluted orange juice & icing sugar until smooth 16. Drizzle over cake. Let icing set before cutting & serving |
