YUM! vegan! Ingredients:
1 cup whole wheat flour |
2 teaspoons baking powder |
1 teaspoon baking soda |
1 cup applesauce |
3 tablespoons safflower oil |
1/3 cup soymilk |
1/4 cup orange juice |
1/3 cup maple syrup |
2 tablespoons sugar |
1 teaspoon vanilla extract |
1 1/2 tablespoons ground flax seeds |
2 tablespoons poppy seeds |
1/2 teaspoon cinnamon |
2 teaspoons orange zest |
Directions:
1. preheat oven to 375 F. 2. Mix dry ingredients. 3. Mix flax and orange juice, then add the other wet ingredients. 4. mix both wet and dry together. 5. spoon into muffin pan lined with cupcake liners or safflower oil. 6. bake 15-25 minutes, until toothpick in center comes out clean. |
