From the Complete Idiot’s Guide to Glycemic Index Snacks Ingredients:
3/4 cup greek yogurt |
1 teaspoon orange zest |
1/2 teaspoon vanilla |
1 teaspoon flax seed |
1 medium navel orange, peeled and sectioned |
1 tablespoon dried cranberries |
1 tablespoon pistachios, pieces |
Directions:
1. In a medium bowl, combine yogurt, orange zest, vanilla and flax. 2. Spoon 1/2 of the yogurt into a parfait glass. Layer 1/2 of the orange slices, 1/2 of the cranberries and 1/2 of the pistachios. 3. To with remaining yogurt and finish off with remaining orange slices, cranberries and pistachios. |
