Orange Pecan Waffles With Orange Butter |

Ingredients:
1 1/2 cups all-purpose flour |
1 tablespoon plus 1 teaspoon baking powder |
1 tablespoon sugar |
1/2 teaspoon salt |
1 cup milk |
3 eggs, beaten |
1/2 cup orange marmalade |
1/4 cup shortening, melted |
1/2 cup finely chopped pecans, toasted |
orange butter |
Directions:
1. Combine first 4 ingredients in a medium mixing bowl; stir well. Combine milk, eggs, marmalade, and shortening in a small mixing bowl; beat well. Add milk mixture to flour mixture, mixing until blended. Stir in pecans. 2. Spoon batter onto a preheated, lightly oiled waffle iron, following manufacturer's directions. Cook 5 minutes or until browned and crisp. Remove waffle, and keep warm. Repeat procedure with remaining batter. Serve waffles warm with Orange Butter. |
