Another favorite from my Grandma Roberts. I still have the handwritten recipe. Grandma lived in Key West and she was a very frugal creative cook. Ingredients:
2 3/4 cups sifted ap flour |
2 1/2 teaspoons of baking powder |
1/4 teaspoon of baking soda |
1/4 teaspoon of salt |
2 tbsp. of butter |
1 cup of honey |
1 egg |
rind of one tangelo orange |
3/4 cup of fresh orange juice |
2 cups of broken pecans |
Directions:
1. Start oven 325 degrees 2. Grease 9x5x2 loaf pan. 3. Sift flour and dry ingredients. 4. Then cream butter and stir in honey, unbeaten egg and grated orange rind. 5. Now add the flour and orange juice, alternately to the butter honey mixture. 6. Stirring well after each addition. 7. Stir in pecans. 8. Pour into prepared pan and bake about 35 minutes. 9. I have actually made this in two round cake tins and frosted it an icing made with a 2 lb. box of confectioners and a tbsp of orange juice and a sprinkle of cinnamon. |
