Classic Connecticut Cuisine by the Connecticut Easter Seals Ingredients:
1/2 cup butter, softened |
1 cup confectioners' sugar |
2 tbs grated orange rind |
1 1/2 cups flour |
2 tsp baking powser |
3 tbs sugar |
2 egg yolks, slightly beaten |
1 cup milk |
1/2 cup orange juice |
3 tbs melted butter |
1 tbs rated orange rind |
2 egg whites |
sliced fresh or frozen strawberries or peaches |
Directions:
1. Beat 1/2 cup butter, confectioners' sugar and 2 tbs orange rind in mixer bowl until light and fluffy. Set aside. 2. Combine flour, baking powder, salt, and sugar in bowl; mix well. Stir in mixture of egg yolks, milk, orange juice, 3 tbs melted butter and 1 tbs orange rind. 3. Beat egg whites in mixer bowl until soft peaks form. Fold into batter. 4. Pour desired amount of batter onto hot highly greased griddle. Cook until brown on both sides, turning once. 5. Serve with confectioners' sugar mixture and strawberries or peaches. |
