Orange Oven Fried Mahi-Mahi Fillets |

Since I catch these fish in the Atlantic Ocean, this is one of my favorite ways to prepare them and this doesn't contain a lot of calories. Ingredients:
2 (6 ounce) mahi mahi fillets, about 6 oz & 1/4-inch thick (or any other firm white-fleshed fish) |
1/4 cup frozen orange juice concentrate, thawed |
1/4 cup panko breadcrumbs or 1/4 cup your choice of any other breadcrumbs |
1 tablespoon butter, melted |
salt, to taste |
lemon pepper, to taste |
parsley (to garnish) |
lemon slice (to garnish) |
Directions:
1. Preheat oven to 500 degrees F. 2. Combine orange juice concentrate with salt and lemon pepper. 3. Dip the mahi-mahi fillets in it and then roll in the Panko, coating well. Place the fillets in a single layer in a greased baking dish. Drizzle with the melted butter. 4. Bake 10 minutes. reduce heat to 350 degrees F and continue baking 5 minutes or until the fish flakes when pierced with a foek. 5. Serve the fillets on a heated platter, garnished with parsley and lemon slices. |
