This is a zesty side to serve with most any main dish. Ingredients:
1 1/2 cups orzo |
2 cups frozen corn kernels |
1 teaspoon grated orange zest |
6 tablespoons orange juice concentrate |
2 teaspoons unsalted butter |
Directions:
1. Bring 2 quarts of water to boiling in a pot; add orzo; cook 9 to 11 minutes. 2. Stir in corn kernels one minute before orzo is done. 3. Grate zest. Drain orzo and corn; return to pot. 4. Stir in orange juice, zest and butter. |
