What can be better than an orange-chocolate cheesecake? How about a few splashes of liqueur, the elimination of refined sugar and lower-fat, lower-cholesterol ingredients? Ingredients:
1 1/2 cup chocolate wafer crumbs |
2 tbsp orange juice |
1 tbsp kahlua |
8 oz silken lite firm tofu |
1/2 cup part-skim, smooth ricotta cheese |
2 tbsp light cream cheese |
1/3 cup maple or rice syrup |
2 egg whites |
1 egg |
2 tbsp kahlua |
1 tbsp grand marnier |
1/4 cup cocoa powder |
*** for a gf cake, use gf cookie crumbs |
Directions:
1. Preheat oven to 350°F. 2. Mix the wafer crumbs with the orange juice and coffee liqueur until combined. Press into a 9-inch spring form pan. 3. Bake 10 minutes, allow to cool thoroughly. 4. Combine tofu, ricotta, cream cheese, maple syrup, egg white, egg, Kahlua, Grand Marnier and cocoa powder in a food processor until smooth. 5. Spread evenly over the crust and bake for 1 hour or until set. 6. Chill overnight before serving. |
