ORANGE MINT RICE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Staley Estate in Wills Point, Texas in 1982. Ingredients:
3 oranges |
3 cups cooked brown rice |
1/3 cup golden raisins |
1/3 cup chopped fresh mint leaves |
1/2 cup chopped walnuts |
1/4 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
Directions:
1. Peel and segment two oranges then set aside. 2. Squeeze juice from remaining orange and set aside. 3. In large bowl combine rice, orange segments, raisins, mint and walnuts. 4. Add orange juice then toss well and season with salt and pepper. |
