I have tried this recipe only once and really liked it. I found it on another site and modified it a bit for my tastes. Let me know what you think! Ingredients:
1/2 cup hulled millet |
1 1/2 cups orange juice, mix (juice from 2 oranges and enough water to make 1 1/2 cups) |
1/4 teaspoon sea salt |
1/3 cup chopped nuts (i like almonds, walnuts, cashews, or even peanuts) |
1/3 cup raisins or currants |
2 tablespoons honey |
1 tablespoon sesame oil |
zest and juice of one orange |
1 tablespoon fresh parsley (for garnish, or can use chopped dates) |
Directions:
1. Rinse millet. 2. Add the water-oj mix and the millet into a medium saucepan. 3. Bring to a boil, reduce heat, cover and simmer for about 30 minutes until tender. 4. Remove from heat. 5. Add salt. 6. Chop nuts and raisins together. 7. Add honey, orange zest, orange juice and oil to nut mixture. 8. toss together with millet. 9. Garnish with chopped parsley. |
