Great for summertime picnics and barbeques. Ingredients:
1 cup butter, softened |
1/4 cup shortening |
2 cups sugar |
5 eggs, room temperature |
3 cups all-purpose flour |
1/2 teaspoon salt |
1/2 teaspoon baking soda |
1/2 teaspoon baking powder |
1 cup buttermilk, room temperature |
1 teaspoon vanilla |
1 teaspoon lemon extract |
1 teaspoon orange extract |

2 teaspoons orange zest |
2 teaspoons lemon zest |
2 tablespoons fresh orange juice |
1 cup powdered sugar |
Directions:
1. In a large mixing bowl, cream butter, shortening, and sugar until fluffy. 2. Add eggs one at a time, beating well after each addition. 3. Sift together flour, salt, baking soda, and baking powder. Add to butter mixture alternatively with buttermilk. Begin and end for flour mixture. 4. Stir in extracts. 5. Spoon batter into greased and floured 10 tube or bundt pan. 6. Bake at 325 degrees for 1 hour. 7. Cool in pan for 10 minutes the turn out onto wire rack with shallow pan underneath. 8. Glaze: 9. Combine ingredients. Stir until smooth. Prick warm cake with toothpick. 10. Slowly pour glaze over cake until all of it is absorbed. 11. Cool completely and serve with ice cream or whipped topping. |
