These are hands down my husband's all time favorite cookie! His mom's recipe. A pain to make, but worth it for his smile. (I love them, too!) Ingredients:
2 cups sugar |
1 cup butter |
1 cup buttermilk |
1 teaspoon baking soda |
2 lemons, juiced |
3 lemon, zested |
2 oranges, juiced |
3 oranges, zested |
4 cups flour, cake |
1 teaspoon baking powder |
2 large eggs, beaten |
1 pound box powdered sugar |
Directions:
1. Cream shortening and sugar, add eggs. Stir soda into buttermilk and add. Sift flour and baking powder together and add juice and rind of the oranges. Mix well. Drop batter by teaspoonsful onto lightly greased baking sheets, spacing well. 2. Bake at 350 for 12 minutes. 3. Icing: Mix box of powdered sugar with juice and rind of the lemons. Ice cookies when they are cool. Let icing dry before storing. |
