Orange Kissed Irish Soda Bread |

This is the Irish Soda Bread I make every St. Paddy's Day. Faith and begorra. Ingredients:
4 cups flour |
2 teaspoons salt |
3/4 teaspoon baking soda |
3/4 teaspoon baking powder |
2 teaspoons grated orange peel |
1/4 cup sugar |
3/4 cup golden raisins |
2 cups buttermilk |
additional sugar to sprinkle on top of loaf |
Directions:
1. Butter or spray an 8 round cake pan. Combine dry ingredients, raisins and orange peel. Mix well. Add buttermilk and stir until soft dough that is firm enough to hold its shape. 2. Knead on a lightly floured surface for 3 minutes, until smooth and velvety. Form into a round loaf and place in pan. Score a cross on the top with a sharp knife and sprinkle liberally with sugar. Bake at 375 for 35 minutes or until browned and hollow-sounding when tapped. Do not overbake or it becomes dry! |
