This is a terrific salad that pairs well with barbeque or Mexican entrees. From a July 1985 issue of Bon Appetit in the Cooking for Two section featuring a Terrific Texas Barbeque . The recipes doubles or triples easily.
Ingredients:
butter lettuce leaves or red leaf lettuce
1 large orange, peeled and thinly sliced
1 cup julienne cut peeled jicama
1/2 cup chopped red onion
1 tablespoon fresh orange juice
1 teaspoon white wine vinegar
3 tablespoons olive oil
salt & freshly ground black pepper
1 tablespoon chopped cilantro
Directions:
1. Line plates with lettuce.
2. Top with orange slices and mound with jicama.
3. Sprinkle with red onion.
4. Blend juice,vinegar,salt and pepper in small bowl.
5. Whisk in oil in thin stream.
6. Spoon over salads, garnish with cilantro and serve.
