This is a good dish for the Holidays but you can have it any time of the year. I have it with pork roast a lot times with green beans and a dessert. My family is wild about this dish. Ingredients:
2 cups cooked brown rice |
2 cups wild rice |
4 green onions, chopped |
1/2 cup pecans (we like walnuts) chopped |
2 tbsp. orange zest |
1/3 cup plus 2 tbsp. orange juice |
1/3 cup currants |
1/4 cup chopped fresh parsley |
1/4 cup chopped fresh basil |
1/4 tsp. salt |
1/4 tsp. pepper |
Directions:
1. Combine brown rice and wild rice in a large serving bowl. 2. Add green onions, pecans, orange zest, orange juice, currants, parsley, basil salt and pepper, toss well. 3. Serve hot or cover and chill. |
