A fresh and different approach to the very necessary candied yams. It is very flavorful but not heavy, and the color is brilliant. People swoon. Then they take more. Ingredients:
2 lb deep orange yams |
1/2 c torani hazelnut syrup |
1 c fresh-squeezed orange juice |
1/4 c butter plus butter to grease the baking dish (optional, really) |
1/4 c light brown sugar |
Directions:
1. Cut yams into 2”-rounds and boil until tender. 2. Mash; add 2 T butter and 2 T brown sugar; mix in orange juice. 3. Butter an attractive baking dish. Place mixture in dish (should be 2-3“ deep). 4. Pour hazelnut syrup on top. Using a butter knife, gently marble the syrup through the yams. Do not mix it in! You want a ribbon of hazelnut syrup running through the yams. 5. Scatter bits of butter and the remaining brown sugar over the top. 6. Bake at 300 ° for 2 hours, or until the mixture has firmed up and the top is crusted (can be lightly crusted). 7. Amaze your guests! Have room for pie! |
