Orange-Glazed Shredded Carrots |

Delicious way to serve healthy carrots. Ingredients:
1/2 cup orange juice |
1/2 cup chicken broth |
1 teaspoon cornstarch |
2 teaspoons olive oil |
2 (10 ounce) bags carrots, shredded |
1 teaspoon butter |
1/4 teaspoon salt |
Directions:
1. In a small bowl, which juice, broth and cornstarch. 2. Heat oil in a large non-stick skillet on medium-high heat. 3. Add carrots and cook 3 minutes. 4. Stir in juice mixture, butter and salt. 5. Cover and cook, stirring occaisionally, 5-6 minutes. |
