Frozen concentrated orange juice is the thrifty stand-in for fresh OJ. I found this recipe in Good Housekeeping magazine. I have not tried this recipe, but I'm posting it for safe keeping. Ingredients:
1/2 cup thawed frozen orange juice concentrate |
2 tablespoons worcestershire sauce |
1/4 teaspoon ground red pepper (cayenne) |
1/4 teaspoon salt |
1/4 teaspoon fresh ground black pepper |
3 1/2 lbs skinless chicken, cut into 8 pieces |
Directions:
1. Preheat oven to 450. 2. In bowl, combine orange juice, worcestershire sauce, ground red pepper, salt and pepper. Reserve 1/4 cup sauce for serving. 3. On 15 1/2 by 10 1/2 jelly roll pan lined with heavy duty foil, arrange chicken pieces. Brush with half of remaining sauce. Roast 10 minutes; turn chicken over and brush again. Roast 8-10 minutes longer or until juices run clear when pierced with tip of knife. 4. Serve with reserved sauce. |
