This is one of my favorite side-dish recipes because it's so easy to prepare. I include orange extract to give the carrots a hint of citrus. I tested recipes for a cookbook on entertaining, so I love to be creative in my cooking. -CL Reader Ingredients:
2 tablespoons butter or stick margarine |
1/3 cup honey |
2 tablespoons minced fresh parsley |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
1/4 teaspoon imitation orange extract |
dash of dried thyme |
1 1/2 pounds baby carrots |
Directions:
1. Preheat oven to 375°. 2. Place butter in a small microwave-safe bowl; microwave at high 20 seconds or until melted. Stir in honey and the next 5 ingredients (honey through thyme). 3. Place carrots in a 1-quart casserole, and pour honey mixture over carrots. Cover and bake at 375° for 1 hour or until tender. |
