Ingredients:
1 pound carrots, scraped and cut into 1/4-inch-thick slices |
3/4 cup canned no-salt-added chicken broth, undiluted |
2 tablespoons frozen orange juice concentrate, thawed and undiluted |
2 teaspoons sugar |
1/4 teaspoon ground ginger |
Directions:
1. Combine carrot and chicken broth in a medium saucepan; bring to a boil. Cover, reduce heat, and simmer 10 minutes. Uncover and cook over high heat 5 minutes. 2. Add orange juice concentrate and remaining ingredients to carrot mixture, stirring well. Cook over medium heat an additional 2 to 3 minutes or until carrot is tender. |
