Fresh carrots in a creamy orange sauce. Very quick and easy. The tender carrots get their zest from a tart yet sweet citrus glaze that relies on orange juice. I can make this in less than 30 minutes using the microwave and five ingredients. Diabetic Exchanges: 2 vegetable, and 1/2 fruit. While this wasn't liked by anyone in my house due to the over powering orange taste. I did make a minor changes to the recipe by using frozen sliced carrots and Splenda. Ingredients:
4 cups fresh carrots, julienned |
1/3 cup orange juice, divided |
2 tablespoons sugar |
2 teaspoons cornstarch |
1/2 teaspoon salt |
Directions:
1. In a 1 1/2 quart microwave safe dish, combine carrots and 1/4 cup orange. Cover and microwave on high for 5-6 minutes or until carrots are crisp tender. 2. Combine the sugar, cornstarch, salt and remaining orange juice until smooth; stir into carrots. Microwave, uncovered, on high for 2-3 minutes or until sauce has come to a boil and is thickened, stirring twice. Let stand for 5 minutes before serving. |
