I found this recipe in Bon Appetite a few yrs. back and have used it many times since then. It appeals to ginger lovers and very easy to put together - makes good company fare. Enjoy P.S. I have used chicken tenders and cooked for less time Ingredients:
4 boneless chicken breasts |
1/4 cup flour |
2 tablespoons unsalted butter |
1 tablespoon olive oil |
4 teaspoons fresh ginger, minced |
2 tablespoons brown sugar |
1 teaspoon dry mustard |
2 cups fresh orange juice, from juicy sweet oranges |
2 teaspoons orange zest |
3/4 cup sliced green onion |
Directions:
1. Season chicken and coat with a little flour. 2. Melt butter and oil over medium heat. 3. Saute chicken until brown for approximately 3 minutes per side. 4. Put on a plate. 5. Add ginger; stir 1 minute. 6. Add brown sugar and mustard and stir to blend. 7. Add juice and zest. 8. Simmer until slightly reduced which takes about 5 minutes. 9. Add chicken and simmer 3 minutes. 10. Turn chicken and add onions and simmer a couple of minutes. 11. Season again to taste. |
