Orange Ginger Beets With Carrots |

Sweet and spicy, this is a unique way to serve beets. Delicious when served over rice noodles! Ingredients:
1 large beet, peeled and julienned |
1 carrot, scrubbed and julienned |
1/4 cup orange juice |
1/2 tablespoon orange ginger stir-fry sauce (vh) |
1 tablespoon soy sauce |
1/4-1/2 teaspoon ground ginger |
1 -2 tablespoon minced crystallized ginger |
2 tablespoons mandarin orange segments (in light syrup) |
Directions:
1. Place all ingredients except mandarin oranges (first 7) in a parchment-paper lined loaf pan. 2. Bake in a preheated 425* oven for about 30-40 minutes until desired tenderness is reached. 3. Scatter mandarin orange segments overtop and bake for about 5 minutes longer until heated though. 4. Enjoy! |
