Another great summer or holiday recipe that is light on taste but fruity and very pretty on the table. Another classic from my mother's massive collection. Enjoy Ingredients:
16 ounces small curd cottage cheese |
6 ounce package orange gelatin |
2 cups heavy cream |
11-1/2 ounce can mandarin oranges drained |
8-1/2 ounce can crushed pineapple drained |
Directions:
1. In large bowl mix cottage cheese with dry gelatin. 2. Whip cream until stiff peaks form then fold into gelatin mixture. 3. Stir in orange sections and pineapple. 4. Spoon into mold that has been rinsed in cold water. 5. Let stand in refrigerator until set at least 6 hours or preferably overnight. 6. Unmold onto serving dish lined with lettuce leaves. |
