this is a recipe out of a Southern Living cookbook.... I have not tried it but it looked so good I thought I would share... and being gluten free I can no longer eat it.. Ingredients:

2 cups self-rising flour |
3 tbsp. sugar |
1 teasp. finely grated orange rind |
1 cup whipping cream |
orange filling |
1/4 cup butter |
1 tbsp. + 3/4 teasp. all-purpose flour |
1/4 cup orange juice |
1 1/4 teasp. finely grated orange rind |
1/4 cup sugar |
Directions:
1. for the FILLING: 2. in a heavy sauce pan melt butter.. 3. add flour and cook 1 minute, stirring constantly 4. gradually add orange juice, cook over medium heat until thickened 5. stir in grated orange rind and the sugar 6. chill the mixture thoroughly 7. yields 2/3 cups 8. .................................................. 9. for BISCUITS: 10. combine the flour, sugar, orange rind, and the whipping cream 11. stir with a fork until blended 12. turn dough out onto a lightly floured board.. and knead 10 - 12 times 13. roll dough into a 12 x 8-inch rectangle 14. spread with the orange filling 15. roll up jellyroll fashion, starting at the long end 16. pinch seam and the ends together 17. slice roll into 1-inch pieces and place in greased and floured muffin pans 18. bake at 425' F for 15 - 20 minutes 19. remove from pans immediately and brush with melted butter 20. yields: 12 |
