this is another cake that looked and sounded good to me... hopefully I can convert it to gluten free.... the recipe and photo are courtesy of Sun Maid Ingredients:
1 cup butter or margarine, softened |
2 cups sugar |
4 eggs |
3 cups all-purpose flour |
2 teaspoons baking powder |
1/4 teaspoon salt |
1 cup dairy sour cream |
1 tablespoon grated orange peel |
1-1/2 cup sun-maid natural raisins |
citrus glaze |
3/4 cup sugar |
1/3 cup orange juice |
Directions:
1. HEAT oven to 350ยบ F. 2. GREASE and flour a 10-inch tube pan. 3. COMBINE butter, sugar and eggs; beat until light and fluffy. 4. COMBINE flour, baking powder and salt; stir into butter mixture alternately with sour cream. 5. STIR in orange peel and raisins. 6. POUR batter into greased pan. 7. BAKE for 1 hour and 15 minutes or until toothpick inserted in center comes out clean. 8. COOL 10 minutes. 9. REMOVE from pan and place on wire rack. 10. COMBINE glaze ingredients; blend well. 11. BRUSH hot cake with glaze; cool. 12. Makes 12 servings. |
