Ingredients:
1/4 head cabbage, thinly sliced (about 4 cups) |
1/4 cup chopped red onion |
2 tablespoons frozen orange juice concentrate |
2 tablespoons balsamic vinegar |
1 tablespoon extra virgin olive oil |
1/4 cup chopped dates |
1/4 cup chopped fresh mint |
1/4 cup chopped walnuts |
black pepper, to taste |
Directions:
1. In a large bowl, mix together the cabbage and onion. 2. In a small bowl, combine the orange juice concentrate, vinegar, olive oil, salt and pepper. 3. Add to the cabbage and toss. 4. Refrigerate until serving time, then stir in the dates and mint. 5. Sprinkle walnuts on top. |
