Anyone who likes dates and the flavor of orange will think these moist muffins are a treat, confirms Rosella Peters of Gull Lake, Saskatchewan. I get compliments each time I serve them. Ingredients:
1-1/4 cups king arthur premium 100% whole wheat flour |
1 cup king arthur unbleached all-purpose flour |
3/4 cup packed brown sugar |
3 teaspoons baking powder |
1/2 teaspoon salt |
2 eggs |
1 cup orange juice |
1/3 cup butter, melted |
3/4 cup chopped dates |
1/3 cup chopped walnuts |
1 teaspoon grated orange peel |
Directions:
1. In a bowl, combine the dry ingredients. Combine eggs, orange juice and butter; mix well. Stir into dry ingredients just until moistened. Fold in dates, walnuts and orange peel. Coat muffin cups with cooking spray or use paper liners; fill two-thirds full with batter. 2. Bake at 400° for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Yield: 1 dozen. |
